Chilli...


Pixelle just reminded me that I'd said I would post pics of the chilli. (I'm not really sure about sharing the recipe!) :-)

So that is what it looked like in the pan when I finally mixed everything in there. Geez, I hate these bad photos.

Anyway, it turned out fabulously! I always worry when I make it because I never seem to do the same thing twice. I mean, I just toss stuff in and see how it mixes. This time I used fresh tomatoes when usually I use frozen (from my garden) or canned. I really liked the consistancy with the fresh. I also put a lot more garlic than I usually do and it was great! I LOVE garlic.

Most chilli recipes that I've seen mix the uncooked ground beef (or whatever meat) in the pot with all the other stuff. Well, I don't do that. I cook my ground beef with several spices (a touch of oregano, basil, lots of black pepper, a dash of salt and garlic (how much depends on my mood at the time).

While the meat is cooking, I put everything else in the big pot. Here is what I add:

Kidney beans, dark or light, drained
onion, chopped
green bell pepper, chopped
tomatoes, chopped
garlic, diced
tomato sauce
tomato paste

Then I drain the meat and add it to the pot. Stir it up a bit and then I add spices. I never add the same spices twice. This time I used:

oregano
basil
chives
black pepper

And of course, tons of chilli powder.

Anywho, there ya have it. It sure has been good. And one pot of this can last me for weeks. I usually freeze half of it to have later, but right now my freezer is full and there is no room. So I've been having chilli at least once a day. :-) It will be good to have this weeked as the temps are supposed to drop again. I think the low tonight is supposed to be 38? Yay! I guess this means I need to close the windows! :-)

It looks yummy to me. i love home made chili and make my own often. LOL! Now I want chili and cornbread. I'm hungry. LOL!

Your recipe is very similar to mine, but I add a "secret" ingredient...one can of beer. Seriously, there is something about the malty taste that just adds that "little something" to it. And it cooks out so no one is getting a buzz from it.
I also make mine in the crockpot. I let that sucker cook all day and don't have to worry about it.
